There are two camps out there. Some prefer the M-42 Steel and some the 10-V Steel. 

Use the Fingernail Grind Bowl Gouge for roughing out - smaller pieces smaller gouge, larger pieces larger gouge. It is also very useful when you roll it on the side and use it as a sheer scraper. Excellent for removing small tool marks and to finesse a long curve.
